Green is definitely the color of the decade; green tea, green friendly, and green coffee . Everyone is thinking green.

While in some circles green coffee is referenced as organic coffee or coffee that have harvested in an environmentally friendly way, more often it is used to describe unroasted coffee.

Unlike roasted coffee, green, or unroasted, coffee can last for months. It is not until the coffee is roasted that it begins to really loose its freshness.

True coffee connoisseurs prefer to buy green coffee and roast it themselves because not only is the roasting process fairly simple but it will produce the best, freshest cup of coffee.

Of course choosing the right bean is important as well. There are many specialty shops out there that can give you advice on flavors and roasting as well as provide you with a large selection of green coffee beans. Some grocery stores even carry a small selection of green coffee beans.
